Packaging

After receiving the products from multiple sources, an inspection verifies that all quality standards have been complied with. Using only the best items, we package the products according to their individual needs. The process aims to preserve each item for optimal time with maximum freshness.

After the packaging process, we consult our group of shipping experts to identify the best routes so that the products reach you in the best condition.

Production Technique

STEP 1

Local farmers, cottage-scale dairies, and members of the village community help to collect rich milk from local cows & yaks.

STEP 2

Reducing fat levels by separating the cream from the milk, making it lighter.

STEP 3

Pasteurize the milk by heating it to above 72 Celsius.

STEP 4

Stimulating the coagulation process by using small amounts of Himalayan salt and lime juice.

STEP 5

Separating whey and cheese from the coagulated milk

STEP 6

Pressure applied to wrapped sacks of cheese/curd for 24 hours. This process helps dry and shape the product.

STEP 7

The cheese squares are then cut into sticks and dried for about 30 days, depending on humidity levels.
